Thankful for: Pumpkin.
Mmm November. Yummy food seems to naturally join with the month.
Our house celebrates (often) our love of this month with delicious pumpkin bread.
You should too. Seriously. You’ll be thankful you did.

Here is the recipe we use (from my roommate, who got it from a dear family friend):
- 2 sticks butter
- 4 eggs
- 16 oz can pumpkin
- 3 cups sugar
mix these ingredients (it will look kinda gross at this point, but hang in there!)
mix the following dry ingredients and add in
- 3 1/2 cups flour
- 2 tsp baking soda
- 1 1/2 tsps salt
- 1 tsp cinnamon
- 3 tsp pumpkin pie spice (in the spice section at the grocery store)
Bake at 350 for 50-60 minutes in greased & floured loaf pans.

Also, if you are looking for an even simpler recipe, try mixing 1 can of pumpkin with a box of spice cake mix. I have made some really great pumpkin muffins like that!
It should be noted that one batch of pumpkin bread lasts no more than 36 hours in our house full of 5 girls.. It is that good!
